Oyster Dressing by Frau Held

INGREDIENTS
  • 8 cups bread cubes or pieces
  • 1/2 cup Butter
  • 1 cup chopped onion
  • 1 cup diced celery with leaves
  • 1/2 tsp Tabasco sauce
  • 1/2 tsp poultry seasoning
  • 2 Tablespoons chopped parsley
  • 1/2 cup juice from turkey (cooked broth from giblets preferred)
  • 1 pint oysters, drained and coarsely chopped
  • 1/2 cup sliced mushrooms
  • add Stone Hill Vidal wine for desired moistness
INSTRUCTIONS
  1. Melt butter, add onion, celery, tabasco, poultry seasoning and salt(to taste).  Cook until tender but not brown
  2. Combine with bread and parsley.
  3. Add juice from turkey, toss lightly.  Add mushrooms and oysters
  4. Bake covered with foil 325 degrees for 45 minutes.  Uncover and bake 15 minutes to brown if desired.  Serves 8-10 people.
