Jim Held’s Most Popular Sausage Brats
INGREDIENTS
- 20 lbs Meat from Pork Butt
- 3 oz salt
- 2 oz Black Pepper
- 2 oz Sugar
- 2 tbsp Red Pepper
- 1 tsp Oregano
- 1 tsp Thyme
- 2 tbsp Sage
- 1/2 tsp Savory
- 5 tbsp Minced Garlic
INSTRUCTIONS

Cut meat in strips from pork butt and sprinkle all seasonings on strips.

Using meat grinder, grind pork butt meat.

Knead and squeeze meat together with hands until mixed thoroughly.

Stuff into pork casings using old-fashioned stuffer or a stuffer attachment for mixer or grinder. Do not pack too tightly or sausage may burst.
