Grilled Salmon with Pineapple-Black Bean Salsa

 

INGREDIENTS
Grilled Salmon
  • 6 Salmon Filets
  •  dash of salt
  •  dash of pepper
  • 3 oz olive oil
Pineapple-Black Bean Salsa
  • 1 cup Fresh Pineapple diced
  • 1/2 cup Red Peppers diced
  • 1/2 cup Green Peppers diced
  • 15 oz Can Black Beans drained and rinsed
  • 1 Orange juiced
  • 1 Lemon juiced
  • 1/4 cup Chopped Cilantro
  • 1/2 tsp Ground Cumin
  •  dash of salt
INSTRUCTIONS
Salmon
  1. Season salmon fillets with salt and pepper and coat with olive oil. Grill over medium- high heat, approximately 7 minutes on first side; flip salmon fillet and continue grilling on second side, approximately 4 minutes.
Pineapple-Black Bean Salsa
  1. Combine salsa ingredients and refrigerate until ready to serve with salmon.
