Grilled Salmon with Pineapple-Black Bean Salsa
INGREDIENTS
Grilled Salmon
- 6 Salmon Filets
- dash of salt
- dash of pepper
- 3 oz olive oil
Pineapple-Black Bean Salsa
- 1 cup Fresh Pineapple diced
- 1/2 cup Red Peppers diced
- 1/2 cup Green Peppers diced
- 15 oz Can Black Beans drained and rinsed
- 1 Orange juiced
- 1 Lemon juiced
- 1/4 cup Chopped Cilantro
- 1/2 tsp Ground Cumin
- dash of salt
INSTRUCTIONS
Salmon

Season salmon fillets with salt and pepper and coat with olive oil. Grill over medium- high heat, approximately 7 minutes on first side; flip salmon fillet and continue grilling on second side, approximately 4 minutes.
Pineapple-Black Bean Salsa

Combine salsa ingredients and refrigerate until ready to serve with salmon.
