Bacon and Pepper Jack Macaroni & Cheese w/ Roasted Red Peppers
- 1 lb Elbow Macaroni
- 2 tbsp Unsalted Butter
- 2 cups Milk
- 2 cups Shredded Pepper Jack Cheese
- 1/2 cup Diced Red Bell Pepper
- 1/2 cup Bacon Bits
Prepare macaroni according to package directions.
Melt butter in a sauce pan over medium heat. Whisk in flour, cook for 1-2 minutes. Gradually add milk while whisking until smooth. Bring to a boil then reduce heat and simmer for 5 minutes. Whisk in cheese until melted. Combine macaroni, bacon, and red peppers in the sauce.
