German Potato Salad

Stone Hill Winery German Potato Salad
INGREDIENTS
  • 2 lbs Potatoes 8 medium
  • 4 slices bacon diced
  • 1/4 cup Chopped Onion
  • 1 tbsp flour
  • 2 tsp salt
  • 1 1/4 tbsp Sugar
  • 1/4 tsp Pepper
  • 2/3 cup Cider Vinegar
  • 1/3 cup Water
  • 1/2 tsp Celery Seed
  • 3 tbsp Chopped Parsley
INSTRUCTIONS
  1. Boil potatoes in jackets until tender. Cool, peel and slice thin. Fry bacon until crisp, add onion and cook 1 minute more. Blend flour, salt, sugar and pepper. Stir in vinegar and water and cook, stirring, 10 minutes.
  2. Pour over sliced potatoes, add celery seed and parsley and serve at once.
