  • 20lbs Meat from Pork Butt
  • 3oz salt
  • 2oz Black Pepper
  • 2oz Sugar
  • 2tbsp Red Pepper
  • 1tsp Oregano
  • 1tsp Thyme
  • 2tbsp Sage
  • 1/2tsp Savory
  • 5tbsp Minced Garlic
  1. Cut meat in strips from pork butt and sprinkle all seasonings on strips.
  2. Using meat grinder, grind pork butt meat.
  3. Knead and squeeze meat together with hands until mixed thoroughly.
  4. Stuff into pork casings using old-fashioned stuffer or a stuffer attachment for mixer or grinder. Do not pack too tightly or sausage may burst.
