Grilled Salmon with Pineapple-Black Bean Salsa
Ingredients
Grilled Salmon
  • 6 Salmon Filets
  • dash of salt
  • dash of pepper
  • 3oz olive oil
Pineapple-Black Bean Salsa
  • 1cup Fresh Pineapplediced
  • 1/2cup Red Peppersdiced
  • 1/2cup Green Peppersdiced
  • 15oz Can Black Beansdrained and rinsed
  • 1 Orangejuiced
  • 1 Lemonjuiced
  • 1/4cup Chopped Cilantro
  • 1/2tsp Ground Cumin
  • dash of salt
Instructions
Salmon
  1. Season salmon fillets with salt and pepper and coat with olive oil. Grill over medium- high heat, approximately 7 minutes on first side; flip salmon fillet and continue grilling on second side, approximately 4 minutes.
Pineapple-Black Bean Salsa
  1. Combine salsa ingredients and refrigerate until ready to serve with salmon.
