German Potato Salad
  • 2lbs Potatoes8 medium
  • 4slices bacondiced
  • 1/4cup Chopped Onion
  • 1tbsp flour
  • 2tsp salt
  • 1 1/4tbsp Sugar
  • 1/4tsp Pepper
  • 2/3cup Cider Vinegar
  • 1/3cup Water
  • 1/2tsp Celery Seed
  • 3tbsp Chopped Parsley
  1. Boil potatoes in jackets until tender. Cool, peel and slice thin. Fry bacon until crisp, add onion and cook 1 minute more. Blend flour, salt, sugar and pepper. Stir in vinegar and water and cook, stirring, 10 minutes.
  2. Pour over sliced potatoes, add celery seed and parsley and serve at once.
