Enjoy this unique take on a tuna salad as a light lunch. It's perfect for those days when you want something great to eat but don't want to cook.
2 cans (5 ounces each) tuna, drained
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 Granny Smith apple, diced
1/4 cup Stone Hill Winery Port
1/4 cup dried cranberries
1/4 cup pine nuts
salt & pepper to taste
8 slices sandwich bread
Soak dried cranberries in Port for 1 hour, longer for more intense Port flavor.
Once cranberries have reached desired flavor intensity, drain Port and combine cranberries with all other ingredients. Mix well.
Spread mixture onto your favorite toasted bread and top with lettuce and tomato.
Garnish with slices of Granny Smith apple and dried cranberries.
