Mixed-Berry Streusel Bars

This is another tasty treat perfected by our Vintage Restaurant pastry chef for the Very Berry Wine Trail event held in July. We've paired it with our award-winning Vignoles for an equally award-winning combination. 

Ingredients:
3/4 cup butter
1 cup sugar
1/4 teaspoon lemon zest
2 egg yolks
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup toasted almonds (chopped finely)
3/4 cup good quality mixed-berry jam

Preheat oven to 350° F. Spray a 9" x 9" baking pan. In a large mixing bowl at medium speed, cream butter, sugar and lemon peel until light and fluffy. Scrape bowl occasionally. Reduce speed to low, beat in yolks and extracts until well-combined. Add flour and salt, beat just until blended, scraping bowl occasionally. With wooden spoon, stir in almonds for crumbly mixture. With floured hand, pat 1/2 crumbles into pan. Spread jam onto dough, leaving a 1/4-inch border. Pinch off pieces of remaining dough and randomly place on top of jam. Bake 40-45 minutes or until golden brown. Cool completely in pan. Cut 4 x 6 for 24 bars. Dust with powdered sugar.
