Jim Held's Most Popular Sausage Brats
Jim Held has been making his own sausage since he was a boy, so you can bet he has perfected the recipe by now.
Ingredients:
20 lbs. meat from pork butt
3 oz. salt
2 oz. black pepper
2 oz. sugar
2 tbsp. red pepper
1 tsp. oregano
1 tsp. thyme
2 tbsp. sage
½ tsp. savory
5 tbsp. minced garlic
Cut meat in strips from pork butt and sprinkle all seasonings on strips. Using meat grinder, grind pork butt meat. Knead and squeeze meat together with hands until mixed thoroughly. Stuff into pork casings using old-fashioned stuffer or a stuffer attachment for mixer or grinder. Do not pack too tightly or sausage may burst.
