Bacon and Pepper Jack Macaroni & Cheese w/ Roasted Red Peppers

INGREDIENTS
  • 1 lb Elbow Macaroni
  • 2 tbsp Unsalted Butter
  • 2 cups Milk
  • 2 cups Shredded Pepper Jack Cheese
  • 1/2 cup Diced Red Bell Pepper
  • 1/2 cup Bacon Bits
INSTRUCTIONS
  1. Prepare macaroni according to package directions.
  2. Melt butter in a sauce pan over medium heat. Whisk in flour, cook for 1-2 minutes. Gradually add milk while whisking until smooth. Bring to a boil then reduce heat and simmer for 5 minutes. Whisk in cheese until melted. Combine macaroni, bacon, and red peppers in the sauce.
